Product Description
Production area:
Cazzago San Martino, hamlet of Calino, from Anfiteatro vineyard facing North-North-West and Sottobosco vineyard facing East, South-East.
Vines:
Chardonnay 60% and Pinot noir 40%.
Breeding method:
Spurred cordon with around 8.000 vines per hectar.
Harvest:
by hand in boxes with careful manual selection of bunches before pressing. It starts the first ten days of August.
Yield:
35 hl of wine per hectar.
Vinification:
soft pressing of whole grapes to obtain first-pressing must and initial fermentation half in stainless steel tanks and half in new French oak barrels (30 per cent new).
Cuvée:
blend of Chardonnay and Pinot noir base wines.
Refermentation in the bottle:
obtained with Franciacorta method in the company’s underground cellars. Maturation for thirty-three months on yeast lees before disgorging.
Bouquet:
particularly fine and complex, it smells rich of exotic and ripe fruit sensations: pineapple, Williams pear notes and with a little inkling of quince apple, of flowers: from lime blossom to camomile; of lightly toasted hazelnut which finishes in a vanilla hint, of acacia honey, with elegant biscuit pan brioche crust notes.
